Ingredients:
For the sauce (4 to 6 people):
- 1 pot of think tomato
- 1 banana
- 1 apple
- 2 pinches of curry powder (more if you like it spicy!)
- 400 ml coconut milk
Garnish:
- Chicken, falafels, skewers, shrimps....
- 2 bananas in slices
- 2 apples in slices
- 1 mango cut into pieces
- Peanuts
- Mango chutney
- 1 cucumber in slides
- 1 bunch of spring onions in slices
- 300 gr cherry tomatoes cut in halves
- lemon juice for the banana and apple slices
- basmati rice for 4 people, depending on the appetite of your family
Preparation:
- In a saucepan, add the think tomato sauce, the banana cut into chunks and the peeled and coarsely chopped apple.
- Add the curry powder and salt to taste.
- Simmer over a low heat for about 20 minutes
- The apples and bananas should be soft
- In the meantime, prepare your chicken, skewers, falafels or shrimps
- Cook the rice
- Cut the fruit and vegetables into pieces and place each in a different bowl
- Add lemon juice on the apples and bananas to prevent oxidation
- Place the bowls of spices on the table and alternate the colours to turn it into a colourful and festive centrepiece
- When the sauce is cooked add the coconut milk
- Mix the sauce with a blender so that it is smooth, heat it a little before serving
